QUINOA SALAD

GLUTEN FREE

My greatest helper in the kitchen is undoubtedly quinoa!

Why?

I can add it to any dish, and since I am gluten-free I can add texture and flavor to almost anything that requires grains, even lentil patties!

It is also one of the seeds that children at home love and never get tired of eating!

These small seeds, which contain plenty of fiber, protein, vitamins and minerals, have made us wonder why we haven’t come across them until now since they entered our lives…

I try quinoa salad in every way, today’s recipe has spinach in it.

MATERIALS 

  • 1 cup quinoa
  • 2 cups of water (for boiling quinoa)
  • Half a kilo of spinach
  • Half red onion
  • 6-7 sprigs of parsley
  • 2 cucumbers
  • 1 lemon juice
  • 1/4 tea glass of olive oil
  • Salt and Pepper
  • Raisins to garnish

PREPARATION 

  • Wash and drain the quinoa well. Put it in a pot and add 2 cups of water. Cook over medium heat, then turn the heat down to low until the water is absorbed.
  • After cooking, let it cool down a bit.
  • Chop the parsley, onion and cucumber.
  • If your spinach leaves are not very large, do not chop them, but if they are large, you can chop them to the size shown in the image.
  • Place the vegetables you chopped in a large bowl, then add the cooled quinoa. Add the salt, oil and lemon and mix well.
  • When serving, you can sprinkle black pepper and raisins on top.
